Starter
Open celeriac ravioli: thin slices of lightly confit celeriac, filled with a velvety leek and walnut stuffing, and topped with a creamy white wine and miso sauce — a dish that is both delicate and deeply comforting.
Main course
Stuffed seitan roast with mushrooms and chestnuts: a rich and festive centrepiece, served with a red wine and cranberry sauce for a tangy seasonal twist. On the side: orange-roasted carrots and a creamy, dairy-free gratin dauphinois, packed with flavour and comfort.
Dessert
Citrus pavlova: crisp and airy plant-based meringue, topped with passionfruit curd, limoncello whipped cream, and candied citrus zest — a fresh, bright, and elegant finale to your feast.
Throughout the class, you’ll be guided step by step in creating each dish, with a focus on techniques, flavour balance, plating tips, and the art of making plant-based cuisine truly exceptional.
After the class, a digital recipe booklet will be sent to all participants.
Aprons, knives, and all necessary kitchen tools are provided during the session.
