The kitchen here is a place of devotion, where turmeric stains fingers gold and lemongrass perfumes the air long before the food even reaches the table. In this evening class, we build two pillars of the Indonesian table: a ceremonial centrepiece and a dessert that has been comforting souls long before any of us were born.
On the menu:
- Nasi Tumpeng – The great cone of celebration — fragrant turmeric rice surrounded by a constellation of sides including spiced tempeh, sautéed greens, and a rich coconut sambal. Traditionally served at milestones, tonight it anchors our table.
- Kolak – A gentle, warming dessert of banana and sweet potato slow-simmered in coconut milk with palm sugar and a whisper of pandan — humble, deeply comforting, and impossible to stop eating.
